The lush hills of Cauca are home to Rigoberto and Luis Herrera, two brothers on a mission to continue nearly a century of coffee innovation across their family-owned estates. One of these estates—”PotosÔ—is where the exceptional “Tres Dragones” coffee was born. After a devastating fire destroyed the original processing facility, the Herreras rebuilt from the ground up, incorporating three state-of-the-art mechanical dryers. These “three dragons” not only inspired the name of this lot, but also transformed the estate’s approach to coffee processing, allowing for unparalleled control over flavour development.
To create this coffee, hand-picked cherries undergo 36 hours of anaerobic fermentation, followed by 48 hours in the precision-controlled dryers, as well as another 15 days of slow drying on solar beds. This meticulous, multi-stage process amplifies the natural fruitiness of the Colombia varietal, resulting in a cup that’s incredibly bold and distinctive.
