We don’t know about you, but there’s many an evening when Two Chimps find themselves craving a piece of homely malt loaf, sticky and filled with juicy dried fruit. Luckily, this coffee tastes just like it, with the added notes of apples and chocolate too! To make it even better, this delightful blend has been decaffeinated, so you can safely enjoy it right before bed if you feel like it.
Brought to you by Azahar Coffee Company, the beans in this decaf blend have been obtained from 7 different estates scaterred across four municipalities of the Colombian region of Huila. If you know anything about specialty coffee, you’ve definitely heard about this part of Colombia: Huila is known the world over not only for the exceptional quality of its coffees, but also for being the first Colombian region to start producing coffee. That’s right: the story of Colombian coffees starts here! Today, Huilan varieties account for 18% of the entire coffee produced in the country. Grown with care, attention and help from various innovative farming techniques, the coffee obtained in this part of the world always flies off the shelves. Connoisseurs tend to value it highly because of its bright acidity and deliciously sweet notes.
This lot has been processed using the washed method, allowed to ferment twice, and decaffeinated with the help of the all-natural sugarcane process. Once picked, the ripe cherries are fermented for 24 hours. They’re then depulped, left to ferment for another 12–48 hours, and washed using clean water. Afterwards, the washed beans are dried in the sun for 20–30 days. The result is a truly delightful flavour that’s hard, if not impossible, to forget!
The medium to medium dark roast of these beans means they’re suited particularly well for the espresso brewing method, AeroPress and moka pot coffee. Feel free to experiment and discover your favourite brewing technique though!
