The Cafetos de Segovia dry mill—home of this coffee—was founded in 2015 by two sisters, Ana and Martha Albir Sotomayor. They’re part of a third generation of coffee growers, working tirelessly to process and export quality coffee obtained from farms within the area. There’s plenty of those to choose from too: the mill is located in Ocotal and surrounded by coffee-growing land, which means producers are able to deliver their coffee cherries to the dry mill the same day they’ve been harvested. This particular blend comes from seven different Nicaraguan farms, all of which are Rainforest Alliance-certified.
