This coffee from Pomahuaca is made up of 31 smallholders, growing 1 hectare coffee each. Decaffeination with sparkling water is treated to precipitate the caffeine-rich carbon dioxide out of the water, and then the caffeine-free water is used again for another cycle. After gently drying, when moisture comes back to original level, green beans are ready for roasting.
