This wasn’t always so: only a few decades ago, these lands were ravaged by volcanic eruptions and devastating civil wars. Specialty coffee beans are some of the world's finest. Who decides that? It's certified coffee tasters, who evaluate the quality (origin, green bean appearance, aromas, flavours, etc.) of these coffees, and score them based on a scale created by the Specialty Coffee Association (SCA). Only coffees that score over 80 points out of the possible 100 are awarded the specialty title.
