Can’t decide between a cup of coffee and a cup of tea? Why not combine the two then?.. Say hello to cascara! Named after the Spanish word for “shell”, cascara is made from the dried outer layer of the coffee cherry—the fruity pulp that surrounds the bean. When brewed, it transforms into a naturally sweet, refreshing drink marked by a juicy texture and bright notes of dried fruit, rosehip, cranberries, and cherries.
Ours comes from the sun-drenched Colombian region of Huila, where the “Guacovia” farm managed by Andres Guaca is located. Whether you enjoy it hot or over ice, cascara is a thirst-quenching surprise you didn’t know you needed—but will definitely crave again.

5. Enjoy!
For an iced cascara (500 ml):
1. Steep 35 g of dried coffee cherries in 450 ml of water, stir, then let steep and cool for ~30 minutes.
2. Stir again, then pour into a serving vessel (Chemex or a French press work well).
3. Add some sliced fruit, e.g., a few slices of lemon, lime, or orange. Dried fruit works well too.
